I'm making a spicy burrito tonight using chipotle chiles in adobo sauce, so this salsa will add a soothing sweetness to the dish.
Ingredients:
1 Mango - peeled and carefully cut from pit and cut into cubes
1 Med. Tomato, diced
1/2 Red Onion, diced
1/2 Cucumber, peeled and diced
5-6 Strawberries, diced
Combine in bowl and dress with this dressing:
1 TBSP Olive Oil
1 TBSP Lime Juice
1/2 tsp Salt
1 TBSP Brown Sugar
Stir and refrigerate until ready to use.
