Mango Coconut Milk Pudding (with Banana)

I just made this up - it turned out pretty well with a nice flavor -

Perfect for after the stir fry I made tonight using the 'Produce Box' Bok Choy.



1 Mango, peeled and carefully cut from the seed
1 Can of full fat Coconut Milk
1 Banana
2 TBSP Cornstarch mixed w/ a little water
Splash of Lime Juice

Combine Mango, Coconut Milk and Banana in blender
(I have Vita-Mix, which is great for fully liquefying anything)

Pour into sauce pan and heat until boiling, whisking constantly to prevent burning
Add in splash of lime juice and cornstarch

Pour into bowl and chill until ready to serve
Top with fruit, if desired
